Ingredients

2 pounds boneless, skinless chicken thighs or breasts, cut into 1-inch cubes
2 tablespoons cornstarch
1 cup water
1/3 to 1/2 cup brown sugar
1/3 to 1/2 cup low sodium soy sauce
2 cloves garlic, minced
1 tablespoon rice vinegar or white wine vinegar
1/2 tablespoon fresh ginger, minced
1 tablespoon honey
1/2 teaspoon sesame oil
Optional vegetables and fruit: assorted bell peppers (red, yellow, green), red onion, pineapple chunks
8 skewers (soak wooden skewers in water at least 30 minutes)
Optional toppings: sesame seeds, chopped green onions

Instructions

1. Mix cornstarch and water in a small bowl to create a slurry.
2. In a medium saucepan, combine the slurry with brown sugar, soy sauce, garlic, vinegar, ginger, honey, and sesame oil. Stir frequently, bring to a simmer, and cook until thickened, about 1 to 3 minutes. Cool completely.
3. Place chicken cubes in a large resealable bag. Add half of the cooled sauce, seal, and marinate in the refrigerator for at least 30 minutes, preferably overnight.
4. Preheat the grill to medium heat (350°F to 400°F).
5. Thread marinated chicken onto soaked skewers, alternating with bell peppers, onion, and pineapple if desired.
6. Grill skewers, turning every 3-4 minutes for about 20-30 minutes, until chicken reaches an internal temperature of 165°F.
7. Baste skewers with reserved sauce during the last few minutes of grilling.
8. Serve hot, sprinkled with sesame seeds and green onions if desired.
