Ingredients

– 1 bag (30-32 ounces) frozen tater tots for crunch and starch

– 16 ounces diced ham or substitutes for savory depth

– 1 ½ cups shredded cheddar cheese for creamy bind

– 1 cup shredded mozzarella or Monterey Jack cheese for creamy bind

– 8 large eggs

– ½ cup sour cream (full fat recommended)

– 1 cup milk for creamy bind

– ½ teaspoon salt to enhance taste

– ½ teaspoon pepper to enhance taste

– ½ teaspoon garlic powder to enhance taste

– ½ teaspoon onion powder to enhance taste

– 1-2 teaspoons hot sauce (optional)

Instructions

1-Preheat your oven to 375°F and grease a baking dish to avoid sticking.

2-In a large bowl, whisk together 8 large eggs, 1 cup of milk, ½ cup of sour cream, ½ teaspoon salt, ½ teaspoon pepper, ½ teaspoon garlic powder, and ½ teaspoon onion powder until smooth.

3-Layer the 16 ounces of diced ham and cheeses (1 ½ cups shredded cheddar and 1 cup shredded mozzarella) at the bottom of the dish.

4-Pour the egg mixture evenly over the ham and cheese layers.

5-Arrange the 1 bag (30-32 ounces) of frozen tater tots on top for a crispy finish.

6-Bake for about 45 minutes until set, then add extra cheddar on top and bake for 5 more minutes until melted.

7-Let the casserole cool slightly before serving to help it hold its shape.
