8 to 10 corn tortillas

1 medium finely chopped onion

½ cup of chopped fresh cilantro

Salsa to taste

Slices of avocado

A sprinkle of cheese

Fresh lime juice

Instructions

1-First Step: Prepare the marinade by combining lime juice, minced garlic, vegetable oil, ground cumin, smoked paprika, salt, and pepper in a bowl. This mixture tenderizes and flavors the meat.

2-Second Step: Marinate the flank or skirt steak for at least 30 minutes to 2 hours in the refrigerator for best flavor absorption.

3-Third Step: Preheat the grill to medium-high heat (around 450°F). This ensures a good sear and the characteristic char.

4-Fourth Step: Grill the meat for 4-5 minutes on each side or until desired doneness. For vegan options, grill mushrooms or tofu similarly, adjusting time to avoid overcooking. Note that the meat should be grilled over charcoal or flame for about 10 to 15 minutes until cooked through, as per traditional methods.

5-Fifth Step: Let the meat rest for 5 minutes after grilling to retain juices.

6-Sixth Step: Slice the meat thinly against the grain for tenderness.
