2 small peaches

1 large or 2 small mangoes

1/4 cup cilantro

1/4 cup red onion

Juice of 1/2 lime

Sprinkle of sea salt

Instructions

1-First Step: Gather all ingredients, rinse the fish fillets, and pat them dry. Prepare your workspace and preheat the oven or grill to 400°F (200°C).

2-Second Step: In a small bowl, combine the spice mixture ingredients like ancho chili powder, paprika, garlic powder, cumin, salt, and lime juice to create a flavorful marinade. Coat the fish evenly and let it sit for 10-15 minutes to absorb the spices.

3-Third Step: Prepare the peach-mango salsa by mixing peaches, mangoes, cilantro, red onion, lime juice, and sea salt in a bowl. Adjust the lime juice based on how sweet your fruit is for the perfect tang.

4-Fourth Step: Char the tortillas in a medium cast-iron skillet over medium heat to give them that authentic taste.
