1/4 cup plus 2 tablespoons (6 tablespoons total; ~75 g) granulated sugar

2 eggs

1 teaspoon (≈5 ml) vanilla extract

1/2 teaspoon kosher salt

Instructions

1-Step 1: Preheat and Prep the Pan Preheat oven to 375°F (190°C). Line the 9×9 pan with parchment paper, adding a 2-inch overhang on two sides. Lightly coat with baking spray or oil. This makes removal easy later.

2-Step 2: Form the Cookie Crust Crumble the 16.5-ounce tube of sugar cookie dough into small pieces. Spread evenly in the pan bottom. Sprinkle 2 tablespoons sprinkles over the dough and press gently to stick. This creates your signature sugar cookie crust.

3-Step 3: Bake the Crust Bake crust for about 20 minutes until lightly golden. Cool completely on a wire rack. This step ensures a firm base for the filling.

4-Step 4: Prepare the Cheesecake Filling Reduce oven to 325°F (163°C). Beat softened cream cheese with 6 tablespoons granulated sugar until smooth, about 1 minute. Add eggs one at a time, mixing well each time. Stir in vanilla extract and kosher salt.

5-Step 5: Assemble and Bake Pour filling over cooled crust and smooth the top. Bake 35 to 40 minutes. Look for firm edges and slightly set center. Cool completely at room temp.
