Ingredients

– 4 large baking potatoes

– 1 tablespoon olive oil

– 250 grams chopped bacon (smoky bacon preferred, pancetta can also be used)

– 250 grams chopped mushrooms

– 4 finely chopped spring onions (also known as scallions or green onions)

– 50 grams cream cheese (optional; can be replaced with additional cheese, crème fraîche, or milk/cream)

– 1 medium free-range egg

– 150 grams grated strong cheddar cheese (can be combined with mozzarella for extra meltiness)

– Salt and pepper to taste

– Sour cream (alternative options include Greek yogurt, crème fraîche, or mayonnaise)

– Extra chopped spring onions

– Chives (optional garnish)

Instructions

1-Preheat the oven to 220°C (425°F) and bake the potatoes for approximately 1 hour until fully cooked, or use leftover baked potatoes.

2-Allow the potatoes to cool slightly, then cut them in half and scoop out the inside carefully, leaving some potato flesh to keep the skins sturdy.

3-Place the hollowed potato skins on a baking tray and bake for about 10 minutes to crisp them up.

4-While the skins are baking, heat the olive oil in a frying pan and cook the bacon and mushrooms until crispy.

5-In a bowl, combine the scooped potato with the cooked bacon, mushrooms, spring onions, cream cheese, egg, half of the cheddar cheese, salt, and pepper, then mash well.

6-Evenly fill each potato skin with this mixture and top with the remaining cheddar cheese.

7-Return the filled skins to the oven for 10 minutes, or until the cheese has melted and is bubbly.

8-Serve warm with sour cream, extra spring onions, and chives for garnish.
