1/2 cup (71g) dried pineapple chopped into 1/4 inch dice Fruit mix

1/2 cup (85g) golden raisins or dried cranberries Fruit mix

1/2 cup (85g) candied red cherries cut into quarters Fruit mix

2 tablespoons (28g) rum or brandy Fruit mix

2 1/2 cups (300g) flour Dough

6 tablespoons (85g) softened butter Dough

1/4 cup (28g) dry milk powder Dough

1/3 cup (67g) granulated sugar Dough

1 1/4 teaspoons (8g) salt Dough

1 teaspoon cinnamon Dough

2 teaspoons cardamom Dough

1 tablespoon (14g) orange zest or 1/8 teaspoon orange oil Dough

1/2 cup (71g) toasted and chopped almonds Dough

8 tablespoons (113g) melted butter Topping

2 cups (227g) confectioners’ sugar Topping

Instructions

1-Mix the sponge ingredients and let them rest for 1 to 4 hours. This helps develop the dough’s structure.

2-Soak the fruit mix in the rum or brandy to infuse flavors and keep the fruits plump.

3-Combine the sponge with the dough ingredients, excluding almonds, and knead until you get a soft, shiny, elastic dough.

4-Knead in the soaked fruit and almonds to evenly distribute them through the dough.

5-Cover the dough and let it rise for 1 1/2 to 2 hours, allowing it to become light and airy.

6-Divide the dough into 40 pieces, roll them into balls, and arrange on a greased or parchment-lined baking sheet with 1 inch spacing.

7-Cover and let rise for 45 minutes until puffy and ready for baking.

8-Bake at 350Β°F (175Β°C) for about 18 minutes until lightly browned, then cool for 10 minutes.

9-Toss the baked bites in melted butter followed by confectioners’ sugar for a sweet finish.

10-Cool completely before storing to maintain freshness and texture.
