Ingredients
– 5 tablespoons unsalted butter (divided)
– 1 tablespoon fresh minced garlic
– 1 cup white wine
– 1 tablespoon lemon juice
– 3 dozen little neck clams (rinsed and scrubbed)
– 1/3 cup chopped fresh Italian parsley for garnish
– Lemon wedges for garnish
Instructions
1-First Step: In a large skillet, melt 2 1/2 tablespoons of the unsalted butter over medium heat.
2-Second Step: Add the fresh minced garlic and cook it briefly, stirring for about 1 minute until it smells fragrant but doesn’t brown.
3-Third Step: Pour in the 1 cup of white wine and 1 tablespoon of lemon juice, then bring the mixture to a boil for a minute or so to let the flavors blend.
4-Fourth Step: Add the 3 dozen rinsed and scrubbed little neck clams along with the remaining 2 1/2 tablespoons of unsalted butter.
5-Fifth Step: Cover the skillet tightly and steam the clams for 7-8 minutes, shaking the pan every couple of minutes to ensure even cooking.
6-Final Step: Once the clams have opened, remove them from the heat, discard any that didn’t open, and sprinkle with 1/3 cup of chopped fresh Italian parsley. Serve right away with lemon wedges on the side, perhaps with crusty bread or over pasta for a complete meal.
