1.5 pounds tri-tip or sirloin steak, cut into 1 to 1.5-inch cubes
2 bell peppers, cut into 1-inch pieces
1 red onion, cut into 1-inch pieces
8 ounces mushrooms, whole or halved
3 cloves garlic, minced
1/4 cup onion or garlic powder
1/3 cup light soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
1/4 cup vegetable or olive oil
1 teaspoon black pepper
Optional: honey, ketchup, Dijon mustard, brown sugar, lemon juice, dried herbs
Instructions
1. In a bowl, combine minced garlic, onion powder, soy sauce, Worcestershire sauce, balsamic vinegar, olive oil, and black pepper. Mix well to form the marinade.
2. Place beef cubes into the marinade, cover, and refrigerate for at least 20 minutes, up to 24 hours.
3. If using bamboo skewers, soak them in water for 30 minutes to prevent burning.
4. Thread beef, peppers, onions, and mushrooms alternately onto skewers.
5. Preheat grill to high heat. Brush skewers with reserved marinade and drizzle with olive oil.
6. Grill skewers for 8 to 10 minutes, turning occasionally, until beef is charred and cooked to desired doneness.
7. Remove from grill and let rest for 5 minutes before serving with fresh herbs if desired.
