– 1/2 tablespoon Shaoxing wine (or dry sherry, or broth for non-alcoholic version)
– 1 teaspoon white granulated sugar
– 1/4 teaspoon sesame oil (or substitute toasted sesame seeds or omit if allergic)
Instructions
1-First, slice 1 lb of baby bok choy in halves, rinse well in cold water until clear, shake out excess water, and drain.
2-In a small bowl, combine the spicy sauce: 1.5 tablespoons chili oil or chili crisp in oil, 1 tablespoon regular soy sauce, 1/2 tablespoon Shaoxing wine, 1 teaspoon white granulated sugar, and 1/4 teaspoon sesame oil; set aside.
3-Heat 1 tablespoon neutral oil in a large pan over low-medium heat, add 8 cloves of minced garlic, and sauté for about 10 seconds until fragrant.
4-Increase heat to medium-high, add the prepared bok choy and 1/3 cup water, and stir-fry until the bok choy is tender, about 2-4 minutes.
5-Pour the spicy sauce over the bok choy, toss to mix thoroughly, then remove from heat and serve.
