– 2/3 cup milk of choice

– 1 cup corn (frozen or canned and drained)

– 1 cup shredded cheddar cheese

– 1 jalapeno, seeded and diced

Instructions

1-First, in a bowl, mix the 8.5 oz box corn muffin mix and 1 teaspoon granulated sugar until well combined.

2-Next, add 2/3 cup milk of choice, 2 tablespoons melted butter, and 1 egg, stirring just until the batter comes together without overmixing.

3-Then, fold in 1 cup corn, 1 cup shredded cheddar cheese, and 1 diced jalapeno to distribute the flavors evenly.

4-For waffles, preheat your waffle iron and grease it with cooking spray. Pour batter in batches and cook until golden, about 4-6 minutes, sprinkling extra cheese on top for more color if you like.

5-If making muffins, preheat the oven to 400 degrees Fahrenheit. Grease muffin tins, fill each cup two-thirds full, add optional cheese on top, and bake for 15-20 minutes until golden.
