  • Total Time: 1 hour 20 minutes
  • Yield: 2 loaves 1x

Ingredients

Scale

3 ½ cups flour

1 tablespoon baking soda

1 ½ teaspoons salt

4 teaspoons pumpkin pie spice

1 (15-ounce) can pumpkin puree

3 cups sugar

1 cup vegetable oil (such as safflower or sunflower)

⅔ cup water

4 eggs

2 teaspoons vanilla extract

½ cup sugar for the cinnamon sugar

2 tablespoons ground cinnamon for the cinnamon sugar

Instructions

1-First, preheat your oven to 350°F and grease and flour two large 9 by 5-inch loaf pans to prevent sticking. Gather and measure all ingredients for a smooth preparation, as outlined in the ingredients section above.

2-Second, in a large bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice. This step ensures the dry ingredients are evenly distributed, setting the base for that perfect spiced pumpkin bread texture.

3-Third, in another bowl, blend the pumpkin puree, sugar, vegetable oil, water, eggs, and vanilla extract until well mixed for a creamy wet mixture.

4-Fourth, gradually stir the flour mixture into the wet ingredients until just combined, being careful not to overmix for a tender crumb.

5-Fifth, in a small bowl, mix the ½ cup sugar and 2 tablespoons ground cinnamon for the cinnamon sugar. Divide three-quarters of the batter between the pans, sprinkle with three-quarters of the seasoning sugar, and swirl it through with a knife for that signature snickerdoodle effect.

6-Sixth, add the remaining batter on top and sprinkle with the remaining cinnamon sugar. Bake for 60 to 65 minutes, or until a toothpick inserted comes out clean. Remember, baking times can vary based on your oven, so keep an eye on it.

7-Finally, cool the bread in the pans for 5 to 10 minutes before transferring to a wire rack to cool completely. For more on baking basics, visit our baking basics guide for helpful tips that tie into your outdoor cooking adventures.

🍥 Swirl most of the cinnamon sugar through the bread to keep the topping from hardening and sticking.
🔪 Run a thin knife or spatula around the pan edges immediately after baking and again after cooling to ensure easy removal.
