Ingredients

– 1 lb fresh-cut okra, sliced into desired pieces

– 5 vine tomatoes or Roma tomatoes

– 2 lbs colossal raw shrimp, peeled and deveined

– 1 tbsp garlic or 4 garlic cloves, minced

– 1/2 cup roughly chopped onions

– 1 tsp kosher salt

– 1/2 tsp coarse black pepper

– 2 tbsp extra virgin olive oil

– 2 tbsp tomato paste

– 2 tbsp Cajun seasoning

– 2 cups water or broth

– 1 tsp ground ginger

– 1 tsp cumin

– 1 tsp red pepper flakes, optional

– 1 tsp dried basil

– 1 tsp dried parsley

– 3 bay leaves

Instructions

1-First Step: Prep the ingredients Start by washing and drying the okra, then trim the tops and slice it into bite-size pieces. Slice the tomatoes, chop the onions, mince the garlic, and peel and devein the shrimp if needed. Having everything ready before the heat goes on makes the cooking easier and helps the sauce come together smoothly.

2-Second Step: Build the flavor base Set a large skillet or heavy pan over medium heat and add the 2 tablespoons of extra virgin olive oil. Once the oil is warm, add the chopped onions and cook for 2 to 3 minutes until they start to soften. Stir in the garlic and cook for about 30 seconds until fragrant, but do not let it brown.

3-Third Step: Add the okra Add the sliced okra to the skillet and stir well so it gets coated in the oil and onion mixture. Cook for about 8 to 10 minutes, stirring often. This step helps reduce the slimy texture that okra can have and starts building that soft, smothered base.
