1 to 1.2kg / 2 to 2.4lb medium potatoes (6 8)

30g / 2 tablespoons unsalted butter, melted

3/4 teaspoon salt for sprinkling

1/4 teaspoon black pepper

Finely chopped parsley (optional garnish)

Instructions

1-First, boil water in a pot and add 1 tablespoon salt, then cook the potatoes until tender small ones take 20 25 minutes, while medium ones need about 30 minutes. Skins might split, but that’s okay for extra crispiness later. You can also steam or microwave them as an alternative.

2-Preheat your oven to 200°C / 390°F (180°C fan) to get it nice and hot for baking.

3-Drain the potatoes and let them steam dry in a colander for 5 minutes to remove excess moisture.

4-Place the potatoes on a tray and gently smash them with a fork or masher, keeping them whole for that fluffy interior thinner pieces get crispier, and an uneven surface adds more crunch.

5-Let the smashed potatoes dry on the tray for another 5 minutes to boost that crispy factor.

6-Drizzle the melted butter and olive oil over the potatoes, then sprinkle with 3/4 teaspoon salt and 1/4 teaspoon black pepper for seasoning.

7-Bake for 45 minutes for small potatoes or 55 minutes for medium ones until they’re deep golden and crispy remember not to flip them during baking.

8-Serve them hot, garnished with finely chopped parsley if you like, for a fresh finish.
