Ingredients

– 8 whole russet potatoes

– 1/4 cup milk

– 1 stick butter, softened

– 3/4 cup sour cream

– 6 slices thin bacon, fried crisp and chopped

– 1/2 cup grated cheddar-jack cheese

– Salt to taste

– Pepper to taste

– Seasoned salt to taste

– 2 whole green onions, sliced

Instructions

1-Preheat your oven to 375Β°F and bake the whole potatoes on a baking sheet for 30-35 minutes until they’re tender with slightly crisp skins.

2-Cut off the ends of each potato, then slice them into 3-4 equal pieces. Use a round cutter or spoon to hollow out the center of each slice, leaving a thin rim for structure, and collect the insides in a bowl.

3-Mash the potato insides with 1 stick of softened butter, 3/4 cup sour cream, and 1/4 cup milk until smooth. Stir in the chopped bacon, salt, pepper, seasoned salt, and 1/2 cup grated cheddar-jack cheese, then taste and adjust as needed.

4-Fill the hollowed slices with the mixture, mounding it slightly, and add extra cheese on top if you want more gooey goodness.

5-Bake at 375Β°F for 8 minutes to melt the cheese, then broil for 3-4 minutes keep an eye on it to avoid any burn spots.

6-Let the potatoes rest on the baking sheet for at least 10 minutes before serving so the filling sets up nicely.
