– 1 ½ cups jasmine rice

– 5 tablespoons butter, divided (cut into ½ tablespoon pieces)

– ½ cup finely chopped yellow onion

– 1 ½ tablespoons minced garlic

– 2 ½ cups low-sodium chicken broth

– 2 teaspoons lemon zest (from one medium lemon)

– Salt and black pepper to taste

– 1 pound medium shrimp, peeled and deveined

– 2 tablespoons lemon juice

– ⅓ cup finely shredded Parmesan cheese

– 2 tablespoons minced fresh parsley

Instructions

1-First, rinse the jasmine rice under cold water until it runs clear, then drain it well. This step removes excess starch for fluffy results.

2-Heat 1 tablespoon of butter in a pot over medium heat and sauté the chopped onion for about 4 minutes until it softens.

3-Next, add the minced garlic and cook for another 30 seconds to release its aroma.

4-Pour in the chicken broth, lemon zest, salt, and pepper, then bring the mixture to a boil.

5-Stir in the rinsed rice, cover the pot, reduce the heat to low, and let it simmer for 13 minutes.

6-While the rice cooks, make sure the shrimp are peeled and deveined.

7-After the rice has simmered, evenly distribute the shrimp over it, drizzle with lemon juice, and add the remaining butter.

8-Cover and cook for 2 to 3 minutes until the shrimp are halfway done, then remove from heat.
