Instructions
1-First, cook 1 package of regular premium pork sausage over medium-high heat for 8-10 minutes until fully cooked, then drain the excess fat.
2-Next, in a bowl, mix the cooked sausage with 8 ounces of softened cream cheese and 2 cups of shredded cheddar cheese until well combined.
3-Halve 32 medium fresh jalapeno peppers lengthwise and remove the seeds for a manageable level of heat.
4-Fill each jalapeno half generously with the sausage mixture, letting it mound slightly above the edges for a hearty bite.
5-Place the stuffed peppers upright on a greased baking sheet or the indented top of a broiler pan to keep them stable during baking.
6-Bake at 425°F (220°C) for 10 minutes, or until the peppers are crisp-tender and the filling is lightly browned. Total prep time is about 30 minutes, plus cooking.
