Ingredients

Smoked sausage (chicken, turkey, beef, or pork), sliced into 1/2-inch coins
Red or baby potatoes, cut into bite-sized pieces or quarters
Sweet corn, sliced into 1-inch discs
Yellow onion, finely diced or sliced
Red bell pepper, thinly sliced
Zucchini or green beans, sliced or trimmed
Olive oil or melted butter (4 to 6 tablespoons)
Seasonings: dried oregano, dried parsley flakes, paprika, garlic powder, onion powder, salt, pepper, and optional Italian seasoning
Optional garnish: freshly grated Parmesan cheese and fresh parsley

Instructions

1. Preheat the grill to medium-high heat (450°F) or oven to 425°F. Prepare heavy-duty foil sheets or line a baking sheet with parchment paper.
2. Prepare all vegetables and sausage by slicing and cutting as needed.
3. In a large bowl, toss sausage, vegetables, olive oil or melted butter, and seasonings until evenly coated.
4. Divide the mixture evenly among foil sheets, adding a tablespoon of butter to each if desired. Seal packets tightly, leaving space for steam.
5. For grilling, cook packets for 25-30 minutes, flipping once. For baking, place packets or mixture on a pan in the oven for 30-40 minutes.
6. Open packets carefully to avoid steam burns. Broil for extra browning if desired and garnish with parsley and Parmesan.
7. Serve hot with optional dips such as honey mustard or ketchup.
