½ to 1 teaspoon chili powder or taco seasoning mix, adjusted to taste

1 (15-ounce) can black beans, drained and rinsed
2 cups corn kernels (fresh, frozen, or thawed)
1 cup diced bell peppers (various colors like yellow, red, or orange)
¾ to 1 ½ cups salsa or diced tomatoes with green chilies
½ cup shredded Mexican cheese blend or alternatives like cheddar, Monterey Jack, or Colby Jack
Optional toppings: chopped cilantro, lime wedges, sliced jalapeños, sour cream, avocado, black olives, and chopped green onions

Instructions

1. Preheat grill to medium-high heat or oven to 375°F-425°F if baking.
2. Prepare large pieces of heavy-duty foil and spray lightly with cooking spray.
3. Season chicken breasts with chili powder, salt, and pepper.
4. Place each chicken breast in the center of a foil piece. Add black beans, corn, bell peppers, and salsa evenly over the chicken.
5. Seal the foil packets tightly to create secure pouches.
6. Grill packets for 20-25 minutes, flipping halfway, or bake on a rimmed baking sheet for about 25-30 minutes.
7. Check chicken doneness with a thermometer; it should reach an internal temperature of 165°F.
8. Carefully open packets, sprinkle cheese, and reseal or leave open to melt cheese for 2-3 minutes.
9. Remove from heat and add desired toppings like cilantro and avocado.
10. Serve with tortillas, over rice, or as a salad topper.
