1 teaspoon cumin (optional)

15 ounces canned black beans, drained and rinsed
1 ½ to 2 cups corn kernels, fresh, frozen, or canned
1 cup diced bell peppers
¾ to 1 ½ cups salsa or diced tomatoes with green chilies, drained
½ to 1 cup shredded Mexican cheese blend
Optional toppings: chopped cilantro, diced tomatoes, jalapeños, sour cream, black olives, lime wedges

Instructions
1. Preheat grill to medium-high heat or oven to 375–425°F.
2. Spray or oil four large squares of heavy-duty foil.
3. Place one chicken breast on each piece of foil, then season with chili powder, cumin, salt, and pepper.
4. Distribute black beans, corn, bell peppers, and salsa evenly over each chicken breast.
5. Add cheese on top or after cooking, depending on preference.
6. Fold and seal the foil packets, leaving a small vent if desired.
7. For grilling, place packets seam side down on the grill; cook for 10 minutes, flip, and cook for another 10–12 minutes until chicken reaches 165°F.
8. For baking, place packets on a baking sheet and bake for 25-35 minutes, checking for doneness.
9. Remove from heat and add cheese if not done earlier; heat until cheese melts.
10. Garnish with fresh toppings like cilantro and lime before serving.
11. Serve with warm tortillas or over rice.
