Instructions

1-First step: Get the pan readyPreheat your oven to 400°F. Line a 12×17-inch baking sheet with parchment paper or foil. If you are using foil, give it a light greasing so the toffee releases easily. Arrange 40 saltine crackers in a single layer so they cover the pan as evenly as possible. A few tiny gaps are not a problem, but try to keep the layer tight.

2-Second step: Make the caramel mixtureSet a saucepan over medium heat and add 1 cup butter and 1 cup brown sugar. Stir until the butter melts and the mixture starts to boil. Once it reaches a steady boil, stop stirring and let it cook for exactly 3 minutes. This is the sweet spot for a deep caramel color and the right texture. If you under-boil it, the toffee can stay soft. If you over-boil it, it may turn too hard.

3-Third step: Pour and spreadCarefully pour the hot caramel mixture over the saltine crackers. Use a spatula to spread it so every cracker gets coated. The crackers may shift a little, and that is totally fine. Cracks in the crackers during baking are also fine and will not change the flavor.

4-Fourth step: Bake until bubblyPlace the pan in the oven and bake for 5 to 6 minutes. You want the topping to look bubbly and active, with the caramel fully covering the crackers. Keep an eye on it so it does not burn. The goal is a glossy, bubbling surface, not a darkened, scorched edge.

5-Fifth step: Add the chocolateTake the pan out of the oven and gently straighten any crackers that may have shifted. Immediately sprinkle 2 cups chocolate chips over the hot toffee. Let them sit for a few minutes so the heat can soften them.
