Ingredients

– 1 kg new potatoes, large ones halved

– 4 tbsp olive oil

– 4 cloves garlic, skins on

– 1 kg side salmon, skin on

– 1 large bunch coriander, roughly chopped for zhoug sauce

– 2 green chillies, roughly chopped for zhoug sauce

– 1 clove garlic, chopped for zhoug sauce

– 1 tsp ground cumin for zhoug sauce

– A large pinch of caster sugar for zhoug sauce

– Juice of 1 lemon for zhoug sauce

– 3 tbsp olive oil for zhoug sauce

Instructions

1-Boil the new potatoes in lightly salted cold water for 15 minutes until they are tender, then drain and let them cool slightly.

2-Preheat the oven to 200°C (fan 180°C, gas mark 6). Lightly squash the new potatoes on a chopping board, place them in a large roasting tin, drizzle with olive oil, add the garlic cloves with skins on, and toss well. Roast for 35 minutes, tossing halfway, until the potatoes begin to crisp.

3-Push the potatoes to one side of the tin, place the salmon skin-side down, season well, and roast for 25 minutes until cooked through.

4-To make the zhoug, blend the coriander, green chillies, chopped garlic, ground cumin, caster sugar, lemon juice, and olive oil in a food processor until smooth.

5-Serve by transferring the crispy potatoes to a platter, placing the salmon on top, and spooning over some zhoug sauce.
