Ingredients
– 1 1/4 pounds salmon, with skin removed and cut into 1-inch pieces
– 1 large egg
– 1/3 cup panko breadcrumbs
– 1 teaspoon onion powder
– 1 teaspoon garlic powder
– 2 teaspoons seasoning blend
– 1 tablespoon mustard powder
– 1 tablespoon fresh lemon juice (from 1 lemon)
– 2 to 3 tablespoons minced fresh chives
– 2 tablespoons vegetable oil
– 4 slices of cheese
– 1/2 cup mayonnaise for the sauce
– 1 tablespoon minced chives for the sauce
– 2 teaspoons seasoning blend for the sauce
– 2 teaspoons fresh lemon juice for the sauce
– 4 toasted brioche buns for serving
– 1 cup caramelized onions for serving
– 1 sliced avocado for serving
Instructions
1-First, pulse the salmon in a food processor about 15 times until itβs broken into 1/8-inch pieces. Transfer 3/4 of the salmon to a bowl, then pulse the rest to a paste for that perfect texture.
2-Next, mix the paste with the egg, panko breadcrumbs, onion powder, garlic powder, seasoning blend, mustard powder, lemon juice, and chives to form a solid mixture.
3-Shape this mixture into 4 patties, making sure theyβre even so they cook just right.
4-Heat a skillet with the vegetable oil over medium heat and cook the patties for about 3 minutes per side, adding the cheese after flipping for that melty goodness. If you prefer, grill them for 2 to 3 minutes per side instead check for doneness by pressing the patty; it should feel springy with a pink center.
5-Once cooked, assemble your burgers by spreading the sauce on the toasted brioche buns, then add the patty, caramelized onions, and sliced avocado on top. The whole process takes about 45 minutes to prep and 10 minutes to cook, so youβre looking at around 55 minutes total ideal for a fast weeknight dinner!
