1 pound lean ground beef
1/4 cup panko breadcrumbs
1 large egg, beaten
2 teaspoons ketchup
1 teaspoon Dijon mustard
1/2 teaspoon dried oregano
1 teaspoon kosher salt

2 tablespoons unsalted butter
2 tablespoons flour
1 1/2 cups beef stock
1 tablespoon ketchup
1 teaspoon Worcestershire sauce
1/2 teaspoon onion powder
6 ounces sliced cremini mushrooms
Salt and pepper to taste

Instructions
1-Combine all steak ingredients except olive oil in a large bowl, then shape the mixture into 4 oval patties, about 3/4-inch thick.
2-Heat olive oil in a large nonstick skillet over medium-high heat and cook the patties for 3 minutes per side until theyβre golden brown, then transfer them to a plate.
3-Reduce the heat to medium, add butter to the skillet drippings, and let it melt before whisking in flour until smooth.
4-Lower the heat to medium-low and gradually whisk in beef stock, stirring in ketchup, Worcestershire sauce, and onion powder.
5-Add the mushrooms and simmer for 5 minutes until the gravy thickens, then season with salt and pepper.
6-Return the patties to the skillet, nestling them into the gravy, cover, and cook for 10 minutes until they reach 160Β°F internally.
7-Serve the patties hot over mashed potatoes, topped with the mushroom gravy.
