Ingredients

– 1 whole chicken (about 4-5 lbs / 1.8-2.3 kg) insides removed

– 1 tablespoon smoked paprika

– 2 teaspoons salt

– 1 teaspoon freshly ground black pepper

– 1/2 teaspoon garlic powder

– 1/4 teaspoon onion powder

– Aluminum foil balls optional for elevating the chicken

– Thickly sliced onions or vegetables optional for elevating the chicken

Instructions

1-Rinse the whole chicken thoroughly and pat dry with paper towels to remove any excess moisture.

2-Whisk together 1 tablespoon smoked paprika, 2 teaspoons salt, 1 teaspoon freshly ground black pepper, 1/2 teaspoon garlic powder, and 1/4 teaspoon onion powder in a small bowl.

3-Rub the seasoning mixture all over the chicken, making sure to cover the outside skin, inside the cavity, and under the breast skin if you like.

4-Place rolled aluminum foil balls or thickly sliced onions or vegetables on the bottom of the slow cooker to elevate the chicken.

5-Set the seasoned chicken on top of the rack to keep it above the juices for even cooking.

6-Cover and cook on low for 6 to 8 hours or on high for 4 to 5 hours, until the internal temperature reaches 160°F (71°C).

7-Carefully remove the chicken, as it will be very tender and might fall apart; discard bones and serve the meat as is or shred it.

8-Optional: For crispy skin, transfer the cooked chicken to a baking dish and broil for 3 to 5 minutes on high.
