3-Arrange sweet potatoes on baking sheet: You’ll want to drizzle 3 tablespoons of olive oil on a large rimmed baking sheet and arrange the rounds in a single layer, using multiple sheets if needed to avoid overlapping.
4-Season the sweet potatoes: Next, sprinkle on the seasonings evenly that’s 1/2 teaspoon each of cinnamon, smoked paprika, ground cumin, ground coriander, and red pepper flakes, plus 1 teaspoon kosher salt and 1/2 teaspoon black pepper.
5-Drizzle honey and coat: Drizzle 1 tablespoon of honey over the top and give everything a good turn to coat it all nicely.
6-Bake sweet potatoes: Pop them in the oven and bake for 20 minutes, then flip the rounds for another 20-25 minutes until the edges are golden and crispy.
7-Finish and serve: Once out, transfer to a platter, add a bit more salt if you like, drizzle with extra honey, sprinkle on 1/3 cup crumbled feta cheese, and garnish with chopped fresh chives or parsley.
