Ingredients
2 red bell peppers or 3/4 cup chopped jarred roasted peppers
1 (15-ounce) can chickpeas or 1 ½ cups cooked chickpeas
1/4 cup fresh lemon juice
1/4 cup tahini
1 small garlic clove
2 tablespoons extra virgin olive oil
1/2 teaspoon ground cumin
Pinch of cayenne pepper
2 to 3 tablespoons water or aquafaba

Instructions
1-Set the oven rack about 5 inches from the broiler and preheat the broiler.
2-Core the red bell peppers, cut into large flat pieces.
3-Place pepper pieces skin side up on a baking sheet and broil for 5 to 10 minutes until charred.
4-Transfer peppers to a sealed plastic bag or cover with plastic wrap in a bowl; steam for 10 to 15 minutes.
5-Peel off and discard the charred skin; keep 1 to 2 pieces for garnish and chop the rest.
6-In a food processor, blend tahini and lemon juice for 1 minute, scrape sides, then blend for an additional 30 seconds until creamy.
7-Add olive oil, garlic, cumin, cayenne pepper if using, and salt; blend 30 seconds, scrape sides, then blend another 30 seconds.
8-Add half the chickpeas and process for 1 minute, scrape down, then add the remaining chickpeas and blend for 1 to 2 minutes until thick and smooth.
9-Add chopped roasted peppers (reserving garnish pieces) and process until smooth.
10-Gradually add cold water or aquafaba while blending until desired consistency is reached.
11-Taste and adjust seasoning as needed.
12-Transfer hummus to a bowl, make a small well in the center, and top with reserved pepper pieces.
