4 ribeye steaks (10–12 ounces each), bone-in or boneless
1 ½ tablespoons neutral oil with a high smoke point
Kosher salt and freshly ground black pepper to taste
4 tablespoons butter
4 garlic cloves, smashed or minced
Fresh herbs: rosemary, thyme, or parsley (4 sprigs total)
Optional seasonings: onion powder, garlic salt, Worcestershire sauce
Instructions
1. Let the steaks come to room temperature for 20 minutes to 2 hours for even cooking.
2. Season the steaks with salt, pepper, and optional seasonings. Marinate with Worcestershire sauce for at least 30 minutes if desired.
3. Heat a heavy skillet over high heat and add the neutral oil.
4. Sear the steaks for 4-5 minutes per side until a golden-brown crust forms. Adjust timing for thickness and preference.
5. Reduce heat, add butter, garlic, and herbs. Baste the steaks with the herb butter for 2-5 minutes, checking internal temp for doneness: 130°F for rare, 135°F for medium-rare, 145°F for medium.
6. Rest steaks covered with foil for 5-10 minutes.
7. Optionally, combine butter with garlic and parsley for garlic herb butter to use post-cooking.
8. Slice steaks against the grain and serve with pan drippings and extra herb butter.
