– 14 ounces sweetened condensed milk, divided (3 tablespoons plus 1 teaspoon per layer for 6 layers)

– blue food coloring

– yellow food coloring

Instructions

1-Step 1: Prepare Your Pan Start by lining your 8×8-inch glass baking dish with aluminum foil. Make sure the foil extends over the edges of the pan this creates handles that make removing the finished fudge so much easier. Press the foil smoothly into the corners for clean edges on your final product.

2-Step 2: Make the Red Layer In a small microwave-safe bowl, combine 1/2 cup white chocolate chips with 3 tablespoons plus 1 teaspoon sweetened condensed milk. Microwave on high for 30 seconds, then stir until completely smooth. The mixture should be glossy and uniform. Add 16 drops of red food coloring and stir until the color is evenly distributed. Pour this into your prepared pan and spread it into an even layer. Pop the pan into the refrigerator for 10 minutes to set.

3-Step 3: Create the Orange Layer While the red layer chills, prepare your second portion. Combine another 1/2 cup white chocolate chips with 3 tablespoons plus 1 teaspoon sweetened condensed milk in a clean bowl. Microwave for 30 seconds and stir smooth. For orange, mix 4 drops of red food coloring with 4 drops of yellow food coloring. Stir until you achieve a uniform orange hue. Once your red layer has set for 10 minutes, pour the orange layer on top and spread evenly. Return to the refrigerator for another 10 minutes.

4-Step 4: Add the Yellow Layer Repeat the same process: 1/2 cup white chocolate chips, 3 tablespoons plus 1 teaspoon sweetened condensed milk, 30 seconds in the microwave, stir until smooth. Add 8 drops of yellow food coloring for a sunny yellow layer. Spread this over the set orange layer and refrigerate for 10 minutes. You’re starting to see that rainbow take shape!

5-Step 5: Mix the Green Layer For green, you’ll need to combine blue and yellow food coloring. Prepare your white chocolate and sweetened condensed milk mixture as before, then add 8 drops of a blue-yellow combination (typically 4 drops blue + 4 drops yellow works well for a nice green). Spread over the yellow layer and refrigerate 10 minutes.

6-Step 6: Create the Blue Layer Prepare your fifth portion using the same ratio of chocolate chips to sweetened condensed milk. Add 8 drops of blue food coloring for a vibrant sky-blue layer. Spread evenly over the green layer and refrigerate for 10 minutes.

7-Step 7: Finish with the Purple Layer Your final layer! Prepare the white chocolate mixture one more time. For purple, combine 4 drops of red food coloring with 4 drops of blue food coloring. Spread this over the blue layer and refrigerate for the final 10-minute set.

8-Step 8: Let It Fully Set After all six layers are complete, let the entire pan set in the refrigerator for at least 1 hour. This ensures the layers are completely firm and will cut cleanly.

9-Step 9: Cut and Serve Once fully set, remove the fudge from the pan using the foil handles. Peel away the foil and place the block on a cutting board. Use a sharp knife to cut into squares. Wipe the knife clean between cuts for the neatest edges. Your rainbow fudge will yield approximately 36 pieces, depending on how large you cut your squares.
