1-In a large bowl, whisk together the 2 cups (250 g) all-purpose flour, 1 teaspoon baking soda, ½ teaspoon baking powder, ½ teaspoon salt, 1 ½ teaspoons ground cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg, and ¼ teaspoon ground cloves or allspice.
2-In another bowl, whisk the ¾ cup (150 g) packed light brown sugar, ½ cup (100 g) granulated sugar, and ½ cup (113 g) melted unsalted butter until well combined. Add the 2 large eggs and whisk vigorously, then stir in the 2 cups pumpkin puree.
