Ingredients

– 1 tablespoon butter

– 4 ounces cream cheese, softened at room temperature

– ½ cup canned pumpkin puree

– 1 (14-ounce) can sweetened condensed milk

– 1 ½ teaspoons pumpkin pie spice

– ½ cup graham cracker crumbs

– ⅓ cup white chocolate chips

– Orange food coloring (or red and yellow food colorings), optional

– Granulated sugar for rolling

– Chocolate chips for topping

Instructions

1-In a skillet over medium heat, combine 1 tablespoon butter, 4 ounces cream cheese (softened at room temperature), ½ cup canned pumpkin puree, 1 (14-ounce) can sweetened condensed milk, and 1 ½ teaspoons pumpkin pie spice. Stir constantly until the mixture thickens and is well-combined.

2-Add ½ cup graham cracker crumbs and ⅓ cup white chocolate chips, stirring until melted and smooth. If desired, incorporate orange food coloring for a brighter hue.

3-Continue stirring until the mixture pulls away from the sides and bottom of the pan. If needed, cook a bit longer for a thicker consistency.

4-Pour the mixture onto a butter-greased baking sheet, spread it evenly, and refrigerate until firm (about 2 hours or overnight).

5-Rub butter on your hands to prevent sticking, then roll the chilled mixture into small balls.

6-Roll the truffle balls in granulated sugar to coat.

7-Use a toothpick to make ridges on the side of each truffle and top with a chocolate chip to resemble a pumpkin stem.

8-Serve immediately or refrigerate until ready to serve. The total prep time is about 30 minutes, cooking takes 15 minutes, plus at least 2 hours for chilling.
