Ingredients
– 1 cup lukewarm water
– 2 teaspoons active dry yeast
– Β½ teaspoon sugar
– 3 cups all-purpose flour (or 1.5 cups all-purpose flour combined with 1.5 cups whole wheat flour)
– 1 to 2 teaspoons kosher salt
– 2 tablespoons extra virgin olive oil
Instructions
1-First, combine the lukewarm water with the yeast and sugar in a bowl, then add half a cup of flour and let the mixture bubble for 15 minutes. This step activates the yeast and sets the foundation for a great rise. Once itβs frothy, youβre ready to build your dough.
2-Next, add the salt, olive oil, and the remaining flour to form a dough, then knead it in the bowl for 1 minute to bring everything together. Transfer the dough to a floured surface and knead for 2 minutes, let it rest for 10 minutes, then knead again for a bit more elasticity. At this point, place the dough in an oiled bowl, cover it, and let it rise for 1 hour until itβs doubled in size.
3-After rising, punch down the dough to release the air, divide it into 7 to 8 balls, and let them rest for 10 minutes. This resting time makes rolling easier and helps with that perfect puff. Roll each ball into an 8 to 9 inch circle on a lightly floured surface, aiming for even thickness.
4-To cook, bake in a 475Β°F oven on a hot pan for 2 minutes per side or cook in a medium-high heat skillet for 30 seconds per side until the pita puffs up. The total preparation time is about 1 hour and 48 minutes, including 1 hour and 45 minutes of prep and 3 minutes of cooking, so itβs quick once you get going.
