At this point, place the dough in an oiled bowl, cover it, and let it rise for 1 hour until it’s doubled in size.

3-After rising, punch down the dough to release the air, divide it into 7 to 8 balls, and let them rest for 10 minutes. This resting time makes rolling easier and helps with that perfect puff. Roll each ball into an 8 to 9 inch circle on a lightly floured surface, aiming for even thickness.

4-To cook, bake in a 475Β°F oven on a hot pan for 2 minutes per side or cook in a medium-high heat skillet for 30 seconds per side until the pita puffs up.
