Ingredients

– 1 recipe of pie dough

– 8 ripe peaches, peeled, pitted, and sliced (or a combination of 7 peaches and 5 apricots)

– 1/2 cup raw or brown sugar

– 1/4 cup whiskey, bourbon, or rum (or alternatively 2 tablespoons lemon juice)

– A pinch of salt

– 4 to 5 tablespoons cornstarch

– Egg wash for brushing the crust

– Sugar for sprinkling (amount as needed)

Instructions

1-First, combine the peaches, sugar, alcohol (or lemon juice), and salt in a bowl and let it sit for at least 30 minutes. This helps the flavors blend and the peaches release their juices.

2-Once that’s done, strain the peaches and mix the juices with the cornstarch in a saucepan, cooking until it’s thick and translucent.

3-Return the thickened juices to the peaches and stir gently. Roll out the pie dough and line your pie dish with it, then fill it up with the peach mixture. For the lattice top, cut the remaining dough into strips and weave them over the filling.

4-Now, for freezing, chill the unbaked pie first, then wrap it up tight for storage. When you’re ready to bake, preheat your oven to 425°F (220°C), brush the crust with egg wash, and sprinkle on some sugar. Pop it on a baking sheet and bake at 425°F for 30 minutes, then lower the heat to 350°F (175°C) and keep going until the filling bubbles this could take 45 minutes to 1 1/2 hours if it’s frozen.

5-Let the pie cool completely before you slice it, so the filling sets up nice.
