Ingredients
– 1/2 to 1 ounce brown sugar simple syrup
– 1/2 large peach, diced (about 1/2 cup)
– 3 to 4 large mint leaves
– 2 ounces bourbon
– Splash of ginger beer or chilled seltzer water
– Ice
– Fresh mint sprigs and peach slices for garnish
Instructions
1-Add the diced peach, mint leaves, and brown sugar simple syrup to the bottom of a cocktail shaker and gently muddle to release the juices and oils.
2-Add the bourbon and fill the shaker with ice, then shake until well chilled.
3-Strain the mixture into a rocks glass filled with fresh ice.
4-Top with a splash of ginger beer or seltzer water.
5-Garnish with fresh mint sprigs and a peach slice.
