Instructions

1- In a medium bowl, whisk together the flour and baking soda, then set aside.

2- In a separate bowl, combine the butter with both sugars and beat on medium speed until the mixture is light and fluffy.

3- Reduce the speed to low, add the salt, vanilla extract, and egg, then beat until well mixed.

4- Add the flour mixture and mix until almost combined.

5- Stir in the oats and chocolate chips. For better results, chill the dough for one hour to overnight if desired.

6- Preheat the oven to 375 degrees Fahrenheit.

7- Use a small ice cream scooper (about two tablespoons) to drop balls of cookie dough, spaced about 2 inches apart, on baking sheets lined with parchment paper.

8- Bake for 8 to 10 minutes, or until the edges are golden but the centers remain soft.

9- Let the cookies cool on the baking sheet for 1 to 2 minutes, then transfer to a wire rack to cool completely.
