✨ These cookies offer a delightful crackly top and a tender bite, making them a comforting treat for any occasion.

  • Total Time: 2 hours
  • Yield: 30-32 cookies 1x

Ingredients

Scale

2 and 1/4 cups all-purpose flour

1 and 1/2 teaspoons baking soda

2 teaspoons ground ginger

1 and 1/2 teaspoons ground cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon nutmeg

1/4 teaspoon salt

3/4 cup unsalted butter

1/2 cup packed light or dark brown sugar

1/4 cup granulated sugar

1/3 cup unsulphured or dark molasses (avoid blackstrap)

1 large egg, at room temperature

2 teaspoons pure vanilla extract

Additional 1/3 cup granulated or coarse sugar for rolling

Instructions

1-First: whisk together the flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt until combined. This step blends the dry ingredients for even flavor.

2-Next: beat the butter and both sugars on high speed until creamy, about 2 minutes, then add the molasses and beat until combined, followed by the egg and vanilla extract.

3-Mixing and Chilling the Dough: After beating in the wet ingredients, mix the dry ones in on low speed until combined; the dough will be slightly sticky. Cover and chill for at least 1 hour, up to 2-3 days, to help with the texture. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper or silicone mats before rolling the dough.

4-Roll the dough: into 1 tablespoon balls, then roll in granulated sugar and arrange them 3 inches apart on the baking sheets. Bake for 11-12 minutes until the edges appear set. For crackled tops, gently bang the baking sheet on the counter 2-3 times, then bake one more minute, and cool on the baking sheet for 5 minutes before transferring to a wire rack.
