2-Next: beat the butter and both sugars on high speed until creamy, about 2 minutes, then add the molasses and beat until combined, followed by the egg and vanilla extract.
3-Mixing and Chilling the Dough: After beating in the wet ingredients, mix the dry ones in on low speed until combined; the dough will be slightly sticky. Cover and chill for at least 1 hour, up to 2-3 days, to help with the texture. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper or silicone mats before rolling the dough.
4-Roll the dough: into 1 tablespoon balls, then roll in granulated sugar and arrange them 3 inches apart on the baking sheets. Bake for 11-12 minutes until the edges appear set. For crackled tops, gently bang the baking sheet on the counter 2-3 times, then bake one more minute, and cool on the baking sheet for 5 minutes before transferring to a wire rack.
