Instructions
1-Combine: 1 1/2 cups whole milk or milk of choice, 1 scoop vanilla or mint protein powder, 3 tablespoons full-fat Greek yogurt, 1 tablespoon sweetener of choice, 1 tablespoon vanilla pudding mix, 2 to 4 drops peppermint extract, 1 teaspoon vanilla extract, a pinch of salt, and 2 to 4 drops green food coloring if you want that fun color, into a pint-sized container. Whisk or use a frother to mix everything thoroughly until it’s smooth and well-blended.
2-Freeze: the mixture on a level surface without a lid for 24 hours until it’s completely solid. This step is crucial for getting the right thickness.
3-Transfer: the frozen pint to the outer bowl of an ice cream maker, secure the lid, and attach it to the motor base.
4-Select: the “Lite Ice Cream” setting and process until the mixture turns creamy, which usually takes a few minutes depending on your machine.
5-Create: a small hole about 1 1/2 inches wide in the center of the ice cream and add your optional mix-ins, like chocolate chips or mint creme cookies.
6-Run: the ice cream maker’s mix-in program once to spread everything evenly. Scoop it out and enjoy right away for the best taste.
7-For later, smooth the top, cover with a lid, and put it back in the freezer. When you’re ready to eat it again, re-spin on the “Lite Ice Cream” setting to keep it creamy.
