Ingredients
– 1 pie crust (store-bought or homemade)
– 1/3 cup light corn syrup
– 1/4 cup brown sugar
– 1 and 1/2 tablespoons unsalted butter (melted)
– 1 egg (lightly beaten)
– 1/2 teaspoon vanilla extract
– 1/2 cup chopped pecans
Instructions
1-First Step: Preheat your oven to 350°F. Gather all ingredients and prepare your work area for efficient baking.
2-Second Step: On a lightly floured surface, roll out the pie dough into a 12-inch circle.
3-Third Step: Use a 3-inch cookie cutter or glass to cut out 12 circles from the dough.
4-Fourth Step: Place each dough circle into each muffin cavity of a 12-count muffin pan, stretching slightly so the dough comes up the sides of the cavity. Refrigerate the muffin pan while preparing the filling.
5-Fifth Step: In a mixing bowl, combine 1/3 cup light corn syrup, 1/4 cup brown sugar, 1 and 1/2 tablespoons melted unsalted butter, 1 lightly beaten egg, and 1/2 teaspoon vanilla extract until fully mixed.
6-Sixth Step: Stir in 1/2 cup chopped pecans.
7-Seventh Step: Remove muffin pan from refrigerator and evenly distribute about 1 tablespoon of filling into each dough cup, being careful not to overfill.
8-Eighth Step: Bake at 350°F for about 25 minutes or until the filling is set.
9-Ninth Step: Cool in the pan for 10 minutes, then carefully remove pies and cool completely on a wire rack.
