🍖 Savor a classic meatloaf that’s easy to prepare and full of comforting, rich flavors perfect for any family dinner.
🍅 This recipe combines juicy ground beef with a flavorful glaze, delivering moist texture and delicious, crispy edges.

  • Total Time: 1 hour 20 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

2 pounds ground beef, 80% or 85% lean (can substitute half with ground turkey, pork, or Italian sausage)

1 medium onion, finely chopped (about 1 cup)

3 garlic cloves, minced

2 large eggs

2 tablespoons ketchup

3 tablespoons fresh parsley, finely chopped

3/4 cup Panko breadcrumbs or gluten-free breadcrumbs

1/3 cup milk

1 teaspoon Italian seasoning (or to taste)

1 teaspoon salt

1/2 teaspoon ground black pepper

3/4 cup ketchup

1 1/2 teaspoons white vinegar

2 tablespoons brown sugar

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Instructions

1-Preheat the oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper or foil for easy cleanup.

2-Sauté the chopped onion in 1 teaspoon oil over medium heat for 5-7 minutes until softened and golden. Let it cool slightly. This step really helps, as sautéing onions improves their texture and flavor, much like what we discuss in our FAQ.

3-In a large bowl, gently combine the ground beef, sautéed onions, garlic, eggs, ketchup, parsley, breadcrumbs, milk, Italian seasoning, salt, and pepper until just mixed.

4-Shape the mixture into a loaf about 8 inches long, 4 inches wide, and 3 inches tall directly on the prepared baking sheet.

5-Bake uncovered for 40 minutes at 350°F.

6-While baking, mix all glaze ingredients in a small bowl until smooth.

7-After 40 minutes, evenly spread the glaze over the meatloaf.

8-Return the meatloaf to the oven and bake an additional 20 minutes or until an instant-read thermometer inserted in the center reads 160°F.

9-Let the meatloaf rest for 10-15 minutes before slicing to allow the juices to redistribute.

Notes

🍴 Avoid overmixing the meat to keep the meatloaf moist and tender.
🧅 Sauté onions to soften flavor and improve texture.
🔥 Baking on a sheet pan creates crispy edges and cooks faster than loaf pans.
⏲️ Rest meatloaf before slicing to retain juices and make cutting easier.
