  • Total Time: 1 hour 15 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

2 pounds ground beef

1 medium finely chopped onion

1 teaspoon oil

2 large eggs

3 minced garlic cloves

2 tablespoons ketchup

3 tablespoons finely chopped fresh parsley

3/4 cup panko or gluten-free breadcrumbs

1/3 cup milk

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon ground black pepper

3/4 cup ketchup

1 1/2 teaspoons white vinegar

2 tablespoons brown sugar

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Instructions

1-Begin by preheating your oven to 350°F (175°C) and lining a rimmed baking sheet with parchment paper or foil for easy cleanup. This sets the stage for a hassle-free bake that locks in flavors.

2-First, sauté the finely chopped onion in 1 teaspoon of oil over medium heat for 5 to 7 minutes until it’s softened and golden, then let it cool. In a large bowl, mix the ground beef, cooled onions, eggs, garlic, ketchup, parsley, breadcrumbs, milk, Italian seasoning, salt, and pepper until just combined don’t overmix to keep it tender. Shape the mixture into an 8-inch long, 4-inch wide, and 3-inch tall loaf and place it on the baking sheet.

3-Bake uncovered at 350°F for 40 minutes. While it bakes, prepare the sauce by mixing 3/4 cup ketchup, 1 1/2 teaspoons white vinegar, 2 tablespoons brown sugar, 1/2 teaspoon garlic powder, and 1/2 teaspoon onion powder. After 40 minutes, spread this sauce over the meatloaf and bake for another 20 minutes or until the internal temperature hits 160°F (71°C). Let it rest for 10 to 15 minutes before slicing to let the juices settle.

Notes

🥩 Don’t overmix the meat mixture – this keeps the meatloaf tender instead of tough
🌡️ Use a meat thermometer to ensure perfect doneness without overcooking, which can dry out the meatloaf
💧 Adding milk and breadcrumbs helps keep the meatloaf moist during baking for a juicier result
