🍁 Enjoy the sweet and crunchy flavor of maple candied pecans, perfect for snacking or adding to your favorite dishes.
🔥 The subtle warmth from cinnamon and cayenne creates a delightful twist on classic candied nuts, ideal for cozy moments.

  • Total Time: 30 minutes
  • Yield: Approximately 2 cups

Ingredients

– 2 cups raw pecan halves (or other nuts such as almonds, walnuts, pistachios, cashews, peanuts)

– 1/2 cup 100% real maple syrup

– 1 1/2 teaspoons ground cinnamon (or other warming spices like ginger, nutmeg, allspice, cloves, pumpkin pie spice)

– 1/2 teaspoon fine sea salt

– 1/8 teaspoon ground cayenne (adjust amount to taste for spiciness)

Instructions

1-Step 1: Combine and Heat
Cook the mixture on medium heat until the maple syrup reaches a low simmer with small, gentle bubbles. This step is key to getting that even coating, so keep an eye on it to avoid any burning. Stir every 1 to 2 minutes during this thin and liquidy stage when the pecans are lightly covered.

2-Step 2: Simmer and Stir
Reduce the heat to medium-low to maintain a low simmer and continue cooking for about 20 to 25 minutes. Stir frequently as the syrup thickens and becomes syrupy, with bubbles slowing down and pecans starting to stick together stir every minute here. Finally, reach the crystallized stage where the syrup looks like tiny grains of sugar; cook for one more minute, stirring every 20 seconds.

3-Step 3: Cool and Serve
Once done, pour the pecans onto parchment paper on a flat surface and break apart any clumps using a spatula or your fingers. Let them cool to room temperature for the best texture. Prep time is about 5 minutes, cook time around 20-25 minutes, and total time roughly 25-30 minutes, making this a quick option for snacks or gifts.

Notes

🍂 Maintain medium-low heat and stir often to prevent burning and allow proper crystallization.
⏳ Cooking takes longer than oven methods but develops richer flavor and texture.
🧂 For a twist, sprinkle flaky or smoky sea salt on cooled pecans instead of mixing it in initially.
