Ingredients

1.5 pounds chicken thighs or breasts
Juice of 2 limes
2 tablespoons fish sauce
2 tablespoons maple syrup or brown sugar
2 tablespoons avocado or neutral oil
1 tablespoon soy sauce or tamari
4 garlic cloves, minced
2 stalks lemongrass, white part only, minced
1 shallot, minced
Optional: black pepper and chili
Jasmine rice or rice noodles
Fresh lettuce, carrots, cucumbers, bean sprouts
Fresh mint and cilantro
Nuoc Cham dipping sauce

Instructions

1. In a bowl, mix lime juice, fish sauce, sweetener, oil, soy sauce, garlic, lemongrass, and shallot. Add pepper and chili if desired.
2. Coat the chicken thoroughly with the marinade. Let sit for at least 30 minutes or refrigerate overnight for deeper flavor.
3. Preheat grill or stovetop skillet to medium-high heat.
4. Grill marinated chicken for 10-14 minutes, or pan-sear until golden and cooked through, reaching an internal temperature of 175°F.
5. Let cooked chicken rest for a few minutes before slicing.
6. Serve with jasmine rice or rice noodles, fresh vegetables, herbs, and a side of Nuoc Cham sauce.
