Ingredients

– 1 cup (230 grams) unsalted butter, softened

– 1 and 1/2 cups (180 grams) powdered sugar, divided (use 1/2 cup / 60 grams in dough, reserve 1 cup / 120 grams for rolling)

– 1 tablespoon (15 ml) fresh lemon juice

– Zest of 1 lemon

– 1 and 1/2 teaspoons lemon extract

– 2 and 1/4 cups (280 grams) all-purpose flour

– 1/4 teaspoon salt

– 3-4 drops yellow food coloring

Instructions

1-Preheat oven: Preheat oven to 350Β°F (175Β°C). Line two large baking sheets with parchment paper or silicone mats to keep things mess-free.

2-Cream butter and powdered sugar: In a mixer or with an electric mixer, cream together the softened butter and 1/2 cup (60 grams) powdered sugar until well combined, which takes about 1-2 minutes for a fluffy mix.

3-Add lemon flavor: Add the fresh lemon juice, lemon zest, and lemon extract, then mix until fully incorporated to bring out that bright flavor.

4-Mix in flour and salt: Gradually mix in the all-purpose flour and salt until just combined, scraping the bowl as needed. If you’re using it, add 3-4 drops yellow food coloring and mix lightly until it blends in.

5-Scoop and shape dough: Using a tablespoon cookie scoop or measuring spoon, scoop dough portions (about 1 tablespoon each) and roll them into balls. Place the balls 2 inches apart on the prepared baking sheets for even baking.

6-Bake cookies: Bake for 14-15 minutes, or until the edges are set and cookies are lightly golden on the bottom don’t worry if you see some cracking on top, that’s normal.

7-Cool and first sugar coating: Let the cookies cool on the baking sheets for 5-10 minutes until you can handle them. While still warm, gently roll each cookie in the reserved 1 cup (120 grams) powdered sugar to coat them heavily, then place on a wire rack.

8-Second sugar coating: Once completely cool, roll the cookies in the powdered sugar a second time for that perfect snowy finish.
