3/4 cup (150 g) granulated sugar

2 tablespoons fresh lemon zest

2 cups (250 g) all-purpose flour

2 tablespoons cornstarch

1/2 teaspoon salt

1 3/4 cups (220 g) powdered sugar for the lemon icing

2 tablespoons fresh-squeezed lemon juice for the lemon icing

Lemon zest for garnish (optional, for the lemon icing)

Instructions

1-Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. This step ensures even baking and easy cleanup.

2-In a large bowl, cream together butter, granulated sugar, and lemon zest with an electric mixer until light and fluffy. This mixing process helps blend the flavors smoothly.

3-In a separate bowl, whisk together flour, cornstarch, and salt. Gradually add dry ingredients to the wet mixture until fully combined, making sure the dough comes together without lumps.

4-Scoop dough into 1 tablespoon-sized balls, rolling between palms to smooth. Place on baking sheet at least 2 inches apart to allow for spreading.

5-Bake for 8 to 10 minutes. Immediately after baking, gently flatten each cookie with the bottom of a glass or measuring cup to create a flat surface and enhance softness.

6-Let cookies cool completely on the baking sheet before moving them.

7-For the lemon icing, whisk powdered sugar and lemon juice together until smooth and slightly thick. Spread icing over cooled cookies using the back of a spoon and garnish with lemon zest if desired. Allow glaze to set before serving.
