  • Total Time: 8 hours
  • Yield: 16 servings

Ingredients

– 1 and 3/4 cups graham cracker crumbs (about 14 full-sheet crackers)

– 5 tablespoons unsalted butter, melted

– 1/4 cup granulated sugar

– 1 and 1/4 cups granulated sugar

– 1 tablespoon packed lemon zest (about 1 lemon)

– 32 ounces full-fat brick cream cheese, softened to room temperature

– 1/2 cup fresh lemon juice (about 3 4 lemons), at room temperature

– 1/3 cup sour cream or plain yogurt, at room temperature

– 1 teaspoon pure vanilla extract

– 3 large eggs, at room temperature

– 3/4 cup lemon curd (highly recommended)

– Optional: whipped cream

– Lemon slices and/or fresh berries

Instructions

1-How to Prepare the Perfect Lemon Cheesecake: Creating this lemon cheesecake is a fun and rewarding process that starts with preheating your oven. First, set it to 350 degrees Fahrenheit and get your 9-inch springform pan ready by lining it if needed. Then, mix the crust ingredients: 1 and 3/4 cups graham cracker crumbs with 1/4 cup granulated sugar and { 5 tablespoons melted unsalted butter until it forms a sandy texture.

2-Press this mixture firmly into the bottom and slightly up the sides of the pan, then bake for 10 minutes. After baking, remove it from the oven and let it cool a bit while you prepare the filling. For the filling, pulse 1 tablespoon packed lemon zest with 1 and 1/4 cups granulated sugar in a blender or food processor until the zest is broken down, then beat it with 32 ounces softened full-fat brick cream cheese until smooth.

3-Next, add 1/2 cup fresh lemon juice at room temperature, 1/3 cup sour cream or plain yogurt at room temperature, and 1 teaspoon pure vanilla extract, mixing until combined. Then, incorporate 3 large eggs one at a time, mixing just until blended to keep the texture perfect. Pour the batter over the warm crust and smooth it out before placing the pan in a larger roasting pan for a water bath.

4-Baking and Cooling Steps: Pour boiling water into the larger pan until it reaches about one inch up the sides, then bake for 55 to 70 minutes until the edges are set but the center is slightly wobbly. If the top starts browning too fast, cover it with foil. Once done, turn off the oven, crack the door, and let the cheesecake sit in the water bath for one hour to cool gradually.

5-After that, remove it from the water bath and let it cool fully at room temperature. Spread 3/4 cup lemon curd over the top, then chill in the refrigerator for at least four hours or overnight. Before serving, loosen the edges with a knife, remove the rim, and add garnishes like whipped cream, lemon slices, or fresh berries. For neat slices, use a clean knife dipped in warm water between cuts, and enjoy your homemade treat.
