Ingredients

– 1 tablespoon finely grated lemon zest (from 1 large lemon)

– 1/4 cup granulated sugar

– 12 tablespoons (1 1/2 sticks) unsalted butter at room temperature

– 1/2 teaspoon kosher salt

– 1 3/4 cups all-purpose flour

– 4 large eggs at room temperature

– 1 tablespoon finely grated lemon zest (from 1 large lemon)

– 3/4 cup freshly squeezed lemon juice (from 5 large lemons)

– 1 1/2 cups granulated sugar

– 1/3 cup all-purpose flour

– 1/2 teaspoon kosher salt

– Powdered sugar for dusting

Instructions

Start by preheating your oven to 350°F (175°C) and lining a 9×9-inch baking pan with parchment paper for easy removal.

Combine the crust ingredients by rubbing lemon zest into sugar, then mix with butter, salt, and flour until crumbly.

Press this dough into the pan and bake for 15 to 22 minutes until the edges turn golden, for a solid base to your lemon bars.

While the crust bakes, whisk the filling ingredients together until smooth.

Pour it over the hot crust right away and bake for another 18 to 20 minutes until set with a slight jiggle.

Cool on pra wire rack for an hour, then chill in the fridge for at least 3 hours or overnight to firm up the texture.

For best results, cut the bars into 16 pieces with a clean knife dipped in hot water between cuts, and dust with powdered sugar just before serving.
