1½ cups finely crushed graham cracker crumbs for crust

⅓ cup packed light brown sugar for crust

4 tablespoons unsalted butter, melted for crust

Two 14-oz cans sweetened condensed milk for filling

1 cup plain Greek yogurt (2% or whole milk) for filling

1 tablespoon grated lime zest for filling

¾ cup fresh lime juice for filling

1 cup cold heavy cream for topping

2 tablespoons confectioners’ sugar for topping

1 teaspoon grated lime zest for topping

8 to 10 thin lime slices for topping

Instructions

1-Preheat oven to 375°F; place rack in middle position.

2-In a medium bowl, combine graham cracker crumbs, brown sugar, and melted butter. Mix with a fork, then use your hands, until well combined. Press firmly into the bottom and up the sides of a 9 x 1.5-inch (deep-dish) pie pan, forming a crust about ¼-inch thick.

3-Bake for 10 minutes, until slightly browned. Cool on a wire rack.

4-Lower oven temperature to 350°F.

5-In a large bowl, whisk together sweetened condensed milk, yogurt, lime zest, and lime juice. Pour into the warm graham cracker crust.

6-Bake for 15 minutes, until filling is almost set (should wobble slightly). Cool at room temperature for 30 minutes, then refrigerate for at least 3 hours to chill.

7-In an electric mixer bowl, beat heavy cream until soft peaks form. Add confectioners’ sugar and beat until medium peaks form.

8-Top the chilled pie with whipped cream. Decorate with grated lime zest and lime slices.

9-Store pie in the refrigerator. Slice and serve cold.
