– 3-4 sprigs of thyme tied together
– ½ head of a very large white cabbage, sliced
– 1 medium carrot, julienned
– 1 red bell pepper, sliced finely
– 1 yellow bell pepper, sliced finely
– ½ scotch bonnet, minced (or ¼ teaspoon chili powder)
– ¼ cup water
– 1 teaspoon all-purpose seasoning
– 1 tablespoon dairy-free butter
– 1 teaspoon black pepper
– Pink salt to taste
Instructions
1-Heat the coconut oil over medium heat and sauté the onion, garlic, and thyme sprigs until they become tender.
2-Add the cabbage, carrot, bell peppers, and scotch bonnet, then fold and stir the mixture until the cabbage wilts and reduces in volume, which takes about 5 minutes.
3-Lower the heat, add the water, cover the pan, and steam for 15 minutes for a soft texture or 10 minutes for a crunchier bite.
4-Remove the lid and season with the all-purpose seasoning, black pepper, dairy-free butter, and pink salt to taste; stir well to combine.
5-Optionally, sprinkle loose thyme before serving.
