Ingredients

– 1 whole chicken, cut up or preferred cuts

– 4-6 chopped Scotch Bonnet peppers (or habanero peppers)

– 1 small chopped red onion

– 4-6 chopped garlic cloves

– 4 stalks scallions, ends trimmed

– 1/4 cup soy sauce

– 1/4 cup vinegar (white or apple cider vinegar)

– 2 tablespoons olive oil

– Juice from 1 large orange (about 3/4 cup)

– Juice from half a lime

– 1 tablespoon freshly grated ginger

– 2 tablespoons brown sugar

– 1 teaspoon nutmeg

– 1 teaspoon allspice

– 1 teaspoon cinnamon

– 1 teaspoon dried thyme or fresh if available

– 1 teaspoon salt

– 1 tablespoon black pepper

Instructions

1-First, combine all marinade ingredients in a food processor or blender and blend until smooth.

2-Next, poke holes in the chicken with a knife to allow better marinade absorption, then place the chicken in a large bowl or sealable bag, pour the marinade over it, and rub thoroughly to cover all pieces.

3-After that, cover and refrigerate for at least 2 hours, preferably overnight, to let the flavors soak in.

4-When ready, discard the marinade before cooking.

5-For grilling, preheat the grill to medium-high, oil the grates, and cook the chicken for 12-20 minutes until the internal temperature reaches 165°F (74°C).

6-If baking, preheat the oven to 400°F (204°C) and bake for 35-40 minutes or until fully cooked.

7-Once done, remove from heat and serve with a squeeze of lime juice for a fresh finish.
