Instructions

1-Getting started with Jamaican Curry Goat is straightforward, beginning with preparing your 3 to 3½ pounds of goat meat cut into chunks. First, season the meat with salt and pepper to enhance its natural flavors, then sear it in ¼ cup of cooking oil for a golden crust. This step locks in the juices and sets the stage for the rich, spicy gravy.

2-Next, add the aromatics: 4 to 5 tablespoons of curry powder, 2 teaspoons of minced garlic, 1 to 2 teaspoons of minced ginger, 1 medium sliced onion, 1 teaspoon of white pepper, 1 to 2 teaspoons of fresh thyme, 2 sliced green onions, and 1 tablespoon of tomato paste.
